Avocado Egg Toast

Have a little time to sit down to breakfast for once? This breakfast will give you the brain boost you need to start the day off right.

Ingredients (single serving)

  • 2 slices of 100% Whole wheat bread
  • 1 Avocado
  • 1 tablespoon minced garlic
  • ½ teaspoon lemon juice
  • 2 eggs
  • Oregano


Toast whole wheat bread. Mash avocado, garlic, lemon juice. Spread avocado mix on the toast. Cook eggs the way you prefer, an easy way is to poach the eggs so it stays together. Place the eggs on top of the avocado toast and sprinkle with oregano. Enjoy!
