Breakfast Burrito

Here is a recipe that will leave you satisfied. This healthy protein and fiber packed breakfast is a great way to spice up a bland breakfast.


  • 4 whole wheat tortillas
  • 1 x 15 ounce can of black beans (rinsed and drained)
  • 4 eggs
  • ¼ cup chunky salsa
  • ½ cup chopped spinach
  • 1 avocado, diced
  • 1/3 cup sharp cheddar cheese, shredded


In a bowl, whisk the eggs then stir in the cheese. Grease medium skillet and add eggs, black beans, salsa, and spinach. Cook over medium heat, stirring and scrambling the eggs until everything is mixed together and cooked through. Split the egg mix between the tortillas. Top with diced avocado and roll up burrito style. Enjoy!
